It would be great to have some kind of exhibition piece like this,
something we can show off at events or get hosted as a display piece
somewhere.

There are lots of games and things you could make with an XY gantry, for
display purposes it would be best if it could be something that was
mostly vertical.

simple ideas could be a giant plot clock whiteboard

maybe a big connect-4 machine 

magnetic draughts or chess board

I suspect most ideas would start with a suitable XY frame set and a
carriage where we could bolt on whatever crazy idea we had.

What would you need from the rest of us to get this idea started ?
